A MAJORCAN VINEYARD
INTRODUCES ITSELF.
Careful and considered interaction with nature is important to us. This can already be seen in the planning and design of our bodega: we have built it deep into an old stone quarry. This means that the entire winemaking process is constantly supported by the natural coolness of the rock. Furthermore, the architecture of our young vineyard is based on the gravity principle – the only way the grapes find their way from the vine to the barrel is by gravitational force.
MAJORCA: THE HOME OF OUR WINES.
The Can Axartell vineyards are situated in a valley south of Pollença in the northern foothills of the Tramuntana mountains. Amidst olive trees that are a thousand years old, wines of a special quality are matured here. Unique climatic conditions and the typical volcanic and chalk soil give our grapes their characteristic minerality and finesse here. Our wine gets everything it needs for perfect development in a natural way. We want to use our passion to make Majorcan wines a force to be reckoned with once again, as this is a region that was once Spain’s most important wine-growing area.

AN UNCOMPROMISING APPROACH MEANS CARRYING OUT ONE’S WORK WITH LOVE.
With the aim of focusing on sustainability and uncompromising quality, we place importance on organic growth methods, careful wine processing and cultivation of all grape types. We work with the greatest care – right down to the finest detail. Only hand-picked, mature grapes are used in our wines.
Here our wines come of age. In the depths of our rock-cut cellar great taste evolves in barrels made of oak.
AUTOCHTHONOUS GRAPE VARIETIES – OUR CHANCE TO REVIVE ANCIENT MAJORCAN WINES.
With love, passion and sustainable methods, we cultivate grape varieties that have been native to Majorca for hundreds of years. Many of them have been forgotten about and are hardly ever used in viniculture today. Our aim is to cultivate these original wines using modern techniques and to give them a new lease of life.
To this end, we use:
- white grape varieties: prensal, giró ros, argamussa and valent blanc.
- red grape varieties: callet, manto negro, escursac, gorgollassa and giró negro.
Pollença – One of the autochthonous grape variety to which we take care with dedication.
THE MÈTODE GRAVETAT – THE MOST CAREFUL WAY OF WORKING WITH WINE.
Our grapes are taken through the entire winemaking process with great care right from the very start. We use the gravity principle, the Mètode Gravetat. This elaborate winemaking process begins at the highest point of our bodega. The grapes and must are subject only to the natural force of gravity. Mechanical pumps are not used. By being handled with as few machines as possible, the grapes enjoy treatment that has a unique result: the finest flavour nuances are revealed, creating unrivalled wines. This method is so important to us that we have emphasised it as a distinction on our labels.
The grape must is not pumped up, but cautiously carried to the top and being refilled in the fermentation tank.
